The second block of study is specialized block and consists of three educational modules, which the student completes within his specialization. The modules of the specialization take place within one course day. Students choose an exact date from a wide range directly in the student section.

F&B Management

Syllabus

Food & Beverage management is one of the most important and most demanding sections of the hotel. The main task of the F&B manager is to comprehensively provide the hotel’s catering section for guests. Thanks to this module, students will improve their knowledge in the field of business forecasting, they will be able to effectively compile and implement business plans in the catering department. The lecturers will share their current experience in organising the effective purchase of raw materials and equipment, advise on how to monitor and select the best offers from suppliers, compare the price and quality of products and how to negotiate business conditions. Areas specific to gastronomy, such as overseeing the selection and processing of ingredients, responsibility for the overall operation of the restaurant and kitchen, and more, will not go unnoticed.

Hotel Management

Syllabus

The module focuses on current trends and skills that operations managers must master. The lecturers will focus on deepening the students’ existing knowledge in the field of communication and management skills. The strategy of developing the professional qualities of employees will not escape attention – ways to support their expertise, independence, ability to work in a team, coping with stressful situations in operation and more. The rules of effective assignment and motivation of staff will also be reminded.

Quality Standards

Syllabus

The aim of the module is a detailed analysis of quality standards in hospitality and gastronomy. Students will deepen their knowledge in terms of obtaining selected quality certification of services, its implementation in practice, revision and maintenance of quality management system according to internationally recognized ISO standards. This module is a great benefit, especially for top hotel managers. The lecturers will focus on defining the quality policy depending on the specific company, as well as on setting goals and ways to meet them, on issues that must be taken into account in quality control, monitoring and maintenance, or increasing the quality level of the company.
